8 ounces pasta
1/2 red onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1/2 cup dry white wine
Juice of 1/2 lemon
1/3 cup heavy cream
Black pepper, ground
6 ounces smoked salmon torn or chopped into small pieces
Chopped fresh parsley
- Bring water to boil, add salt and cook pasta according to package instructions until al dente.
- In a large skillet heat olive oil on medium heat. Add onion and cook 5 minutes. Add garlic and cook 1
more minute. Add wine and cook about 5 minutes. Add lemon juice and heavy cream and cook 5
minutes. When it thickens, add salt and pepper.
- Stir in the salmon pieces and cook for another 2 minutes. Add drained pasta to the skillet and stir
- Garnish with Parmesan and fresh parsley and serve.
